Blend : 50 % Cabernet-Sauvignon, 25 % Grenache, 25 % Cinsault
Vinification : Destemmed harvest, fermentation with native yeasts. The CabernetsSauvignons are roasted for 40 days of maceration in truncated vats punctuated by daily dynamisation and 2 light deletions.
Assembly with Grenache and Cinsault presses of Petite Selve and Berty Not glued and not filtered.
